Luciana’s recipe for cinnamon puff cookies
Ingredients for Cookies
| 3/4 cup | softened butter (1 1/2 sticks) | |
| 3/4 cup | sugar | |
| 1/4 cup | powdered sugar | |
| 2 | large eggs | |
| 1/2 tsp | vanilla extract | |
| 3 cups | flour | |
| 1 tsp | baking powder | |
| 1/2 tsp | salt |
Ingredients for Filling
| 4 tbsp | butter, room temperature | |
| 1/2 cup | brown sugar | |
| 1 tsp | cinnamon |
Make the cookie dough
Cream the butter, sugar & powdered sugar with a mixer
Add eggs and vanilla extract, and mix well
Add flour, baking powder, and salt and mix well. Make sure to add the flour bit by bit while mixing it in
Wrap the dough in plastic wrap and store overnight
Assemble & bake the cookies
Preheat oven to 350 degrees fahrenheit
Mix brown sugar and cinnamon, make sure it’s completely ground
Roll out the cookie dough int o4 long thin strips
Spread butter & filling on top, then split (each time for all 4, one at a time), roll up and put on a greased tray
Put more butter & filling on top
Bake for 9-11 mins or until pale in color (and should look puffy)
Set aside to cool before enjoying
